Covid-19 isolation took its toll on me, as it did everyone. hopefully this is the start of an ongoing blog where I offer my perspective on topics related to the restaurant industry.
What will the long term effects of this pandemic be?
This is a hot button topic these days. As of today, we've seen nearly 20% of our industry shut down, and more are coming. This might be an unpopular opinion, long term it will benefit our industry. Now, hear me out.
For years us chefs have complained about a lack of skilled staff. The staff who dedicate their lives to the craft. The ones who show up early and stay late. The ones who take initiative, put their heads down, and just work hard. The harsh reality of this pandemic will, in my opinion, weed out the faint of heart and strengthen the talent pool for our industry.
